By now you’re unwinding from all the Thanksgiving festivities and wondering what the heck you’re going to do with all that leftover food! Don’t panic, there are some really tasty and creative ways to use up all the turkey you have in your refrigerator. Turkey Tortilla Surprise
Shred some leftover turkey meat and use to fill soft tortillas for a tasty twist on your usual tortilla filling. Keep the festive flavor going by adding sweet corn kernels, cranberry sauce and even some mashed sweet potato. Wrap it all up and enjoy for a easy lunch or light dinner.
Green Bean Quiche
Don’t throw out that extra green bean casserole. You can turn this side dish into a whole new meal with just a few ingredients. Whisk 4 eggs, 1 1/2 cups of milk and a handful of grated cheese together then stir in your left over beans. Tip the mixture into a 10″ prepared pie crust and bake at 375F for for 40 minutes or until set.
Vietnamese Turkey Hoagie
Give boring old sandwiches a miss and instead transform your turkey leftovers into an exotic Vietnamese inspired hoagie. Take a hoagie roll or baguette and slice lengthwise. Spread with hot chilli sauce. In a bowl at some shredded turkey meat, the juice of a lime, a teaspoon of fish sauce and a little sprinkle of sugar. Toss to combine. Add meat mixture to the roll and top with cilantro, shredded carrot and daikon or radish julienned.
When you’re done with all the picking and leftovers, it’s time to make the most of your turkey carcass by making a stock for soups. Add turkey bones to oven pan and roast at 400F for 30 minutes then add chopped carrot, onion and celery to the pan. Roast for a further 40 minutes. Transfer to a large stock pot and cover with cold water. Add bay leaves, thyme, parsley, salt and pepper and bring to the boil. Simmer for 2 hours then taste (continue to simmer until desired flavor is reached). Strain and pour into containers to freeze for later.
