Give boring old sandwiches a miss and instead transform your turkey leftovers into an exotic Vietnamese inspired hoagie. Take a hoagie roll or baguette and slice lengthwise. Spread with hot chilli sauce. In a bowl at some shredded turkey meat, the juice of a lime, a teaspoon of fish sauce and a little sprinkle of sugar. Toss to combine. Add meat mixture to the roll and top with cilantro, shredded carrot and daikon or radish julienned.

Turkey Stock
When you’re done with all the picking and leftovers, it’s time to make the most of your turkey carcass by making a stock for soups. Add turkey bones to oven pan and roast at 400F for 30 minutes then add chopped carrot, onion and celery to the pan. Roast for a further 40 minutes. Transfer to a large stock pot and cover with cold water. Add bay leaves, thyme, parsley, salt and pepper and bring to the boil.
