The best rum balls in the world recipe

Every year at Christmas time my mom makes a batch of her famous rum balls. For years I’ve been trying to get her to part with the recipe but she just smiles and says “Maybe next year.” I gave up asking. Last week, she emailed me and asked me if I would like her rum ball recipe. I thought of it as an early Christmas present. Honestly, these rum balls are that good. The secret, as you can see, is that my mom goes a little heavy on the rum but I’m not complaining. These are definitely not a treat for children (although you could make them family-friendly by using rum flavoring).
You will need

  • 1/2 cup dark chocolate pieces
  • 1/2 cup milk chocolate pieces
  • 1/2 cup powdered sugar
  • 3 tablespoons honey
  • 3 cups vanilla wafers, crushed in food processor
  • 2 teaspoons vanilla extract
  • pinch of salt
  • 1/2 cup dark rum (spiced rum is ideal)
  • crushed walnuts, optional
  • powdered sugar, extra
  • cocoa powder
  • desiccated coconut

To make
In a double boiler (or a metal pan over a pot of simmering water) melt the two types of chocolate. Remove from heat and stir in the honey then sift in the icing sugar. Then stir in the crushed vanilla wafers and crushed walnuts if using. Add the pinch of salt, vanilla and rum and mix well. Refrigerate until firm. You can then begin shaping 1-inch balls and rolling in you favorite coatings; powdered cocoa gives a bitter finish or you could choose coconut for a traditional coating. If nut allergies are no problem, you might also like to roll some in crushed walnuts for a sophisticated touch.
For a neat gift idea, place an assortment of rum balls inside a clear cellophane bag and tie with a pretty ribbon. Makes a good hostess gift – if you can bear to part with them. I hope you enjoy these rum balls as much as I do.
